Micro Stuffed Brinjal

Simply stuff the slit brinjals with spice powders and place them in a microwave till done. Serve this masaledaar micro stuffed brinjal dish with roti.
Method- Wash and slit brinjals into 4 upto 3/4 lengthwise.
- Stuff the brinjals with the stuffing mixture and arrange them in a microwave idli steamer and steam for about 8 minutes.
- Remove, open and cool.
- Arrange them in a big microwave safe plate, drizzle little oil on it and microwave at 70% for 4 minutes.
- Turn over and microwave for more 10 minutes at 70%, turning twice or thrice till brinjals are uniformly roasted.
- Serve immediately.
