Ingredients

For The Strawberry Sauce
3/4 cup fresh strawberry purée
2 tsp cornflour
2 tbsp sugar
1/2 tbsp lemon juice

For The Pudding
2 1/2 cups milk
1/4 cup sugar
4 tbsp chopped agar-agar
1/2 tsp vanilla essence
Method

For the strawberry sauce

  1. Combine the cornflour and ½ cup of water in a small bowl and mix well.
  2. Combine the strawberry purée, sugar and cornflour-water mixture in a broad non-stick pan, mix well and cook on a medium flame for 5 minutes, while stirring continuously. Keep aside to cool completely.

  1. Heat the milk and sugar in a deep non-stick pan, mix well and cook on a medium flame for 5 minutes, while stirring occasionally.
  2. Meanwhile, combine agar- agar and ¼ cup of water in a small broad non-stick pan, mix well and cook on a medium flame for 5 minutes, while stirring continuously.
  3. Add the agar-agar - water mixture and vanilla essence, mix well and cook on medium flame for 1 minute, while stirring occasionally.
  4. Strain the mixture into a deep bowl using a strainer.
  5. Transfer the mixture into an aluminium round container and keep aside to cool completely.
  6. Once cooled, refrigerate for at least 1 hour.

How to proceed

  1. Just before serving, loosen the sides with a sharp knife, invert on a serving plate and pour the prepared strawberry sauce evenly around the pudding.
  2. Cut into equal wedges and serve chilled.

This Vanilla pudding was the highlight of the party, it has a very simple taste and when topped with strawberry sauce it was a great colour combo and also great in taste.
