Ingredients
For Phulkopir Cutlet
1 cup grated cauliflower
1/2 cup boiled and mashed kabuli chana (white chick peas)
1/2 cup grated paneer (cottage cheese)
1/4 cup finely chopped onion
2 tbsp finely chopped coriander (dhania)
1 tbsp sesame seeds (til)
1 tsp ginger-garlic (adrak-lehsun) paste
1/2 tsp green chilli paste
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/2 tsp cumin seeds (jeera) powder
1/2 tsp chaat masala
1 tbsp besan (Bengal gram flour)
salt and freshly ground black pepper (kalimirch) to taste
2 tsp oil
Method
For phulkopir cutlet
- To make phulkopir cutlet, in a deep bowl, add cauliflower, mashed chickpeas, paneer, onions, coriander, sesame, ginger garlic paste, turmeric powder, chilli powder, cumin powder, chaat masala, besan, salt and pepper powder.
- Mix all the ingredients very well using your hands. Divide into 8 equal portions.
- Roll and shape each portion of the mixture into 2 inch (50mm) diameter flat cutlet.
- Heat 1 tsp oil in a broad nonstick pan and place all the prepared cutlets.
- Cook them on medium flame from both the sides using 1 tsp oil for cooking the cutlets.
- Serve phulkopir cutlet hot with green chutney.
