kand wafers is an upvas dry snack recipe relished by most of us. Learn how to make kand chips.

To make kand wafers, heat the oil in a deep non-stick pan, deep-fry a few slices on a medium flame till they turn golden brown in colour from all the sides. Drain on an absorbent paper. Sprinkle the rock salt and pepper powder and toss well. Cool completely and store in an air-tight container.

Purple yam has a nice subtle sweet flavour, which makes these kand chips very appealing to the palate. Tossing these wafers with pepper and black salt makes them tastier than regular run-of-the-mill chips, and also makes them suitable to have on fasting days!

You can enjoy these purple yam chips for vrat upvas during Ekadashi, Mahashivratri, Janmashtami and even the festival of colours, Holi. At snack time serve it with Piyush – a rich satiating drink made by combining shrikhand, unsalted buttermilk, sugar, cardamom powder and nutmeg powder.

Cool the salted kand wafer completely and store this crunchy snack in a jar and enjoy it any time you wish, can also be served with other Faaral recipes. You can also try potato wafers for faral as a variation.

Tips for kand wafers. 1. Slice the kand just before frying them as it tends to turn black with time due to exposure to air. 2. Do not make very thick nor very thin slices for this recipe. 3. We have rock salt as it is an upvas recipe, but you can use table salt if you wish to.

Choose that are firm and do not have any cracks, bruises or soft spots. Avoid those that are displayed in the refrigerated section of the produce department since cold temperature negatively alters their taste. 
  2. Clean, wash the purple yam and wipe it using a kitchen towel. 
  3. Using a peeler carefully peel its bark like thick skin and discard it. 
  4. Stand the purple yam on one end on a chopping board, and carefully slice down through the centre to cut it into 4 equal halves. Place a piece flat on the chopping board and slice it by cutting across the board using a sharp knife. You can also use a slicer if you wish to. Adjust the thickness to get slices of desired thickness. 
  5. Next to make kand chips, heat the oil in a deep non-stick pan. 
  6. Add a few kand slices in it and deep fry them on a medium flame till they turn golden brown in colour from all the sides. 
  7. Drain on an absorbent paper.
  8. Immediately sprinkle the rock salt on it. We have used rock salt as these purple yam chips are for vrat upvas. But if you wish you can use table salt also. 
  9. Add pepper powder for added flavor. 
  10. Toss the kand wafers well. You need to add rock salt and pepper powder and toss immediately upon frying so they stick to the wafers. 
  11. Cool salted kand wafer completely and serve or store in an air-tight container.

This is so so amazing!! I just loved it. Quick and very easy recipe. The pepper and salt when mixed gives it an additional flavour which makes it even more delicious. Trust me you should try this recipe and i am sure everyone of you will enjoy it.
