For hariyali dum aloo
 

  1. To make hariyali dum aloo recipe, in a mixer add coriander, spinach, garlic, ginger, green chillies, curd and blend it into a smooth paste.
  2. In a deep pan, heat oil and fry the baby potatoes till golden brown, add turmeric powder, chilli powder and mix well. Remove and keep aside.
  3. In the same pan, heat 1 tbsp oil, add bayleaf, cinnamon, cloves, cumin seeds, onions and sauté on medium flame for 2 to 3 minutes.
  4. Add the green masala paste, fried baby potatoes, fresh cream, kasuri methi, salt to taste and ½ cup of hot water.
  5. Mix well and cook on medium flame for 3 to 4 minutes, while stirring occasionally.
  6. Serve hariyali dum aloo hot with rice or roti of your choice.

    2. Add ½ cup blanched spinach (palak).
    3. Add 2 tbsp roughly chopped garlic (lehsun).
    4. Add 1 tsp roughly chopped ginger (adrak).
    5. Add 1 tbsp roughly chopped green chillies
    6. Add ¼ cup curd.
    7. Blend it into a smooth paste. Green masala paste is ready. Keep aside. 
    8. In a deep pan, heat 1 tbsp oil.
    9. Shallow fry the baby potatoes till golden brown.
    10. Add ¼ tsp turmeric powder (haldi).
    11. Add ½ tsp chilli powder.
    12. Mix well and keep aside. 
    13. In the pan, heat 1 tbsp oil.
    14. Add 1 bay leaf (tejpatta), 1 small cinnamon (dalchini) stick and 2 cloves (laung / lavang).
    15. Add 1 tsp cumin seeds.
    16. Add ½ cup finely chopped onions. 
    17. Saute on medium flame for 2 to 3 minutes.
    18. Add the green masala paste.
    19. Add the fried baby potatoes.
    20. Add 1 tbsp fresh cream
    21. Add 1 tbsp of kasuri methi. Mix well.
    22. Add salt to taste.
    23. Add ½ cup of hot water.
       
    24. Cook on medium flame for 3 to 4 minutes, while stirring occasionally.
    25. Serve hariyali dum aloo hot with rice or roti of your choice.
