For Cucumber , Capsicum and Celery Salad
2 cups cucumber cubes
1 cup capsicum cubes
1/4 cup finely chopped celery (ajmoda)
1/2 cup watermelon (tarbuj) cubes
1/4 cup pineapple cubes
To Be Mixed Into A Curd Basil Dressing
1/2 cup thick low fat curds (dahi)
2 tbsp finely chopped basil
1/4 tsp mustard (rai / sarson) powder
1/2 tsp powdered sugar
salt to taste

in a deep bowl put 2 cups cucumber cubes.

Add 1 cup coloured capsicum cubes.

Add 1/4 cup finely chopped celery (ajmoda).

Add 1/2 cup watermelon (tarbuj) cubes.

Add 1/4 cup pineapple cubes. This provides the sweetness to the salad.

Mix well.

Cover with a cling wrap and put in the fridge till you want to serve.

A good combination of fruits and vegetables in a curd based dressing. I don't like pineapple so I added red capsicum.
