chai ka masala is made by dry roasting cloves, cardamoms, kalimirch and cinnamon in a non stick pan for 1 minute. Cool, transfer to a mixer and then add dry ginger powder and nutmeg. Blend to a smooth powder and your homemade chai ka masala is ready.

For chai ka masala
 

  1. To make chai ka masala , combine the cloves, cardamom, black peppercorns and cinnamon in a broad non-stick pan and dry roast on a medium flame for 1 minute.
  2. Transfer into a plate and keep aside to cool completely.
  3. Once cooled, add the dried ginger powder, nutmeg powder and blend in a mixer to a smooth powder.
  4. Store the chai ka masala in an air-tight container and use as required.


Handy tip:
 

  1. chai ka masala remains fresh for 4 months when stored in an air-tight container.

How to make Chai ka Masala:

 

    1. To make Chai ka Masala, heat a broad non-stick pan on a medium flame. When the pan is hot enough, add the 3 tbsp clove (laung / lavang).

    2. Now, add the 1/4 cup cardamom (elaichi).

    3. Also add the 1 1/2 tbsp black peppercorns (kalimirch).

    4. Furthermore, add the the 2 sticks cinnamon (dalchini). You can also add 1/4 tsp of fennel seeds or at this stage if you wish to.

    5. Dry roast on a medium flame for 1 minute. You will get a beautiful aroma when all the spices are roasted to perfection. Make sure you do not burn the spices. Burnt spices will give an awful flavor to the Chai ka Masala.

    6. Transfer the roasted spices immediately to a plate and keep aside to cool completely. You have to be very quick. Keeping the roasted spices on the pan for long will burn them.

    7. After all the spices have cooled down, transfer those to a small mixer jar.

    8. Blend it to a smooth powder. You can skip this step and blend after the addition of all the ingredients. We have blended this Chai ka masala twice to get a really fine powder.

    9. Now, add the 1/4 cup dried ginger powder (sonth).

    10. Similarly, add the 1 tsp nutmeg (jaiphal) powder. You can also add a few strands of saffron (1/4 teaspoon safforn)  or dried rose petals for better color and flavour.

    11. Blend chai ka masala | chai powder | tea masala | Indian masala tea powder to a smooth and fine powder.

    12. Store the Chai ka Masala in an air-tight container and use as required.  To make Masala chai using Chai ka Masala, add about 1/4 tsp of this masala( for 1 cup ) to the milk before you boil it. You can store this masala for about 4 months.

Hi, Wonderful recipe. I was always wondering what was missing in my recipe- black pepper !! One suggestion : I find that if you include just a strand of kesar in the above recipe, it increases the flavour of the chai.

Hi Dixit, 1/4 cup is approx 50 grams and 1/8 cup is approx. 25 grams. All the ingredients in the first step are roasted and cooled. Then add mace, nutmeg and ginger powder to it and blend in a mixer to a fine powder. Do try this recipe and share your review with us.
