To make baby corn paneer jalfrezi, heat the oil in a wok/kadhai, add the spring onion whites and sauté on a medium flame for 1 minute. Add the green, red and yellow capsicum and sauté on a medium flame for 2 to 3 minutes, till the capsicum turn a little soft. Add the baby corn, turmeric powder, chilli powder, coriander-cumin seed powder, tomatoes, tomato ketchup, tomato purée, mix well and sauté on a medium flame for 1 to 2 minutes, while stirring occasionally. Add the paneer, garam masala, vinegar, sugar and salt, mix well and cook on a medium flame for 1 minute. Add the spring onion greens and a little water, mix well and cook on a medium flame for 1 more minute. Serve baby corn paneer jalfrezi immediately garnished with spring onion greens.

Ingredients
For Baby Corn Paneer Jalfrazie
3/4 cup baby corn , cut into 4 lengthwise and blanched
1 cup paneer (cottage cheese) , cut into 25 mm. strips
1/4 cup thinly sliced spring onions whites
1/4 cup thinly sliced green capsicum
1/4 cup thinly sliced yellow capsicum
1/4 cup thinly sliced red capsicum
2 tbsp oil
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/2 tsp coriander-cumin seeds (dhania-jeera) powder
1/2 cup thinly sliced tomatoes
2 tbsp tomato ketchup
2 tbsp tomato puree
1/4 tsp garam masala
1 tsp vinegar
1/4 tsp sugar
salt to taste
2 tbsp finely chopped spring onion greens
For The Garnish
1 tbsp finely chopped spring onion greens

Keep all the vegetables ready on a plate before you start making the Baby corn Paneer Jalfrazie.

Take the oil in a wok/kadhai or a deep non-stick pan and heat it up. Put the spring onion whites into it. Sauté on a medium flame for 1 minute.

Now, add the bell peppers to the Baby corn Paneer Jalfrazie.We have used all three colors of bell peppers available in the market. We will first add the green capsicum.

Add the red and yellow capicums also.

Give it a stir and sauté on a medium flame for about 2 to 3 minutes, till the capsicum become slightly soft.

Now, add the babycorn which is cut diagonally and blanched. Blanching is a process of cooking a vegetable in boiling water till half cooked and refreshing it with cold water.

Now, we will add the spices. Add the turmeric powder to begin with.

Add the chilli powder.

Similarly, add the coriander-cumin seed powder. This will give an earthy taste to Baby corn Paneer Jalfrazie.

Add the tomatoes as well.

Now add the tomato ketchup for a mildly sweet taste.

Also, add the tomato purée. We have used ready made tomato purée which is easily avilable in the market but you can easily make it at home.

Now, add the strips of paneer.

Add the garam masala to the Baby corn Paneer Jalfrazie. Garam masala is the soul of Indian Cuisine.

Add the sugar to balance the sourness coming from the vinegar and the tomatoes.
