To make minty couscous, clean and wash the couscous thoroughly. Combine the couscous and milk in a deep non-stick pan, mix well and cook on a medium flame for 8 to 10 minutes or till it is tender. Keep aside to cool slightly. Combine all the ingredients, including the cooked couscous, in a deep bowl and mix gently. Refrigerate for at least half an hour. Serve lemon mint couscous chilled.

What is minty couscous recipe made off? minty couscous is made from easily available ingredients in India which are 2 tbsp chopped mint leaves (phudina), 1/2 cup couscous or 1/2 cup broken wheat (dalia), 1 cup low fat milk , 99.7 % fat-free, 1/2 cup chopped tomatoes, 1/2 cup chopped spring onions, 1/4 cup chopped coriander (dhania), 2 tsp olive oil , 2 tsp lemon juice and salt to taste.

Add 1/2 cup couscous. If you wish, at this stage use broken wheat (dalia) instead as the taste will be the same.

Cook on a medium flame for 3 to 4 minutes or till it is tender. This is the image taken at 2 minutes. We still need to cook. If you want you can use broken wheat instead but that will take 8 to 10 minutes to cook.

This is the image taken at 3 minutes and the couscous is come to boiling point. We still need to cook a bit but make the flame on low now.

This is the image taken at 4 minutes. We had reduced the flame from medium to low once the couscous had reached boiling point. Your couscous is ready. Keep stirring a bit off the flame to prevent the couscous from sticking.

Keep aside to cool slightly. Mix gently and we see that we need to add a bit of water as the couscous has dried out. So add 2 tablespoons water.

Mix the water in gently and the couscouss will get moist and separate.

In a deep bowl put the cooked couscous.

Add 2 tbsp chopped mint leaves (phudina).

Add 1/2 cup chopped tomatoes.

Add 1/2 cup chopped spring onions.

Add 1/4 cup chopped coriander (dhania).

Add 2 tsp olive oil.
