Our atta biscuits recipe is an Indian style whole wheat biscuits.

Time to indulge in some sweet and spicy atta biscuits. Resplendent with the aroma of ghee and the magic of Indian spices like nutmeg and cardamom, these atta biscuits are a real pleasure to bite into!

We have made atta biscuits recipe into an eggless atta biscuits. So this biscuits are perfect for vegetarians.

Indian style whole wheat biscuits have a rich and pleasantly sweet taste and melt-in-the-mouth texture, which is achieved by using atta instead of plain flour. The eggless atta biscuits might seem to be too soft when you take them out of the oven, but rest assured that they will get crispy upon cooling.

Tips to make the perfect atta biscuits recipe. 1. Add milk. Every flour has a different absorption capacity, add water just enough to bind together all the ingredients. Do not knead it or else gluten will form and result in chewy atta biscuits. 2. Cut into 18 equal squares using a sharp knife or a pizza cutter. You can even make use of cookie cutters to give various shapes to whole wheat flour biscuits. 3. Remove from the oven and cool whole wheat biscuits completely. Do not eat when they are freshly baked as they will be soft in the middle and they firm up only after cooling.

  1. To make atta biscuits, combine the whole wheat flour, cardamom powder, nutmeg powder and salt in a deep bowl and mix well. Keep aside.
  2. Combine the melted ghee and castor sugar in a deep bowl and mix very well using a spatula.
  3. Add the above mixture into the dry ingredients mixture and mix well using your fingers.
  4. Add the milk and knead into a semi-stiff dough.
  5. Roll the dough into a 225 mm. (9”) x 125 mm. (5”) rectangle without using any flour for rolling
  6. Prick using a fork and cut into 18 equal squares using a sharp knife.
  7. Place them on a baking tray and bake in a pre-heated oven at 180ºc (360ºf) for 20 minutes.
  8. Cool the atta biscuits completely, store in an air-tight container and use as required.

Dough for atta biscuits

 

    1. To prepare dough for atta biscuits recipe | eggless atta biscuits | Indian style whole wheat biscuits | in a deep bowl take whole wheat flour.
    2. Add cardamom powder.
    3. Add nutmeg powder. Both elaichi and jaiphal enhance the flavor of atta biscuits.
    4. Add salt.
    5. Mix well and keep the dry ingredients aside.
    6. In another bowl, take melted ghee. Ghee can be swapped with butter.
    7. Add castor sugar. If you are not a fan of white sugar, make use of organic jaggery powder.
    8. Mix very well using a spatula. You can also make use of a whisk or electric beater to cream the sugar.
    9. Add the above ghee- sugar mixture to the dry ingredients mixture.
    10. Mix well using your fingers. It will look like breadcrumbs.
    11. Add milk. Every flour has a different absorption capacity, add water just enough to bind together all the ingredients. Do not knead it or else gluten will form and result in chewy biscuits.
    12. Knead into a semi-stiff dough. You can add chopped nuts and dry fruits to the dough if you like.
How to make atta biscuits

 

    1. To prepare whole wheat biscuits, roll the dough into a 225 mm. (9”) 125 mm. (5”) rectangle without using any flour for rolling.
    2. Prick using a fork so, the biscuit does not fluff up while baking.
    3. Cut into 18 equal squares using a sharp knife or a pizza cutter. You can even make use of cookie cutters to give various shapes to whole wheat flour biscuits.
    4. Place them on a baking tray leaving some space in-between. You can line the baking tray with a parchment paper so, that the biscuit does not stick to the pan.
    5. Bake in a pre-heated oven at 180ºC (360ºF) for 20 minutes. Remove from the oven and cool completely. Do not eat atta biscuits | eggless atta biscuits | Indian style whole wheat biscuits | when they are freshly baked as they will be soft in the middle and they firm up only after cooling.

How to check that biscuits are done as you said it will be soft when we will take out from oven. Also please suggest how much jaggery can use instead of sugar. Same or little less

I tried this recipe as per measurement but a lot of ghee came out of the dough while kneading and biscuits got baked black from base and unbaked from upper side

While rolling very little ghee may come out which is ok and cookies will always be a little darker from below compared to the top but they will never be uncooked. If they are uncooked then make sure your baking is on the mode that baked from the top also.

Followed your recipe and made them today. They turned out delicious! Thanks for sharing the recipe. The only thing I didn?t get was to have top part golden/brown. Bottom was crusty and golden. Not sure if baking for another 2 mins would help.

Hi, You have baked it right, this biscuit does not need very dark brown colour. once baked allow it to cool it completely on the tray or the wrack. it will become hard enough and it will gain a light brown colour only on the edges.

Hi, yes it not used in this recipe. we need it to be crunchy and flat like a biscuit. adding soda or powder will give the rise which is not required for the biscuit.
