Enjoy the crispiness of deep fried Tomato bajjis, prepared by dipping the tomato slices in besan and rice flour based batter with green chutney as tea time snack or to liven up a cloudy rainy day.

Tomato Bajjis recipe - How to make Tomato Bajjis

Ingredients

12 horizontally thick sliced tomatoes
1 cup besan (Bengal gram flour)
1 cup rice flour (chawal ka atta)
oil for frying
salt to taste
2 tsp chilli powder
water as required
for the filling :
1 tbsp roasted cumin seeds (jeera)
2 tsp chilli powder
1/2 cup dry coconut (kopra)
Method


  1. Dry roast jeera, in a mixer, add jeera, red chilli powder and dry copra and make itno powder.
  2. Take one thick slice of tomato and on one side of it, spread the powdered mixture all round the slice and keep aside.
  3. Mix besan and rice flour adding water into a thick batter. add red chilli powder and salt to taste.
  4. Heat oil, take one filled slice and without inverting it dip it in the besan batter and spread batter on both sides of the slice. put it in oil and fry till golden brown.
