Method

For tamatar ka kut

    For tamatar ka kut
  1. To make tamatar ka kut, in a small non-stick pan, roast the groundnuts, sesame seeds, coconut and cumin seeds on a medium flame for 3 minutes. Keep aside to cool slightly.
  2. Blend in a mixer to fine powder without using any water. Keep aside.
  3. In a deep non-stick pan, combine the tomatoes, chilli powder, turmeric powder, coriander powder, dry roasted powder, garlic paste, ginger paste, tamarind pulp, sugar, salt and 1 cup of water, mix well and cook on a slow flame for 14 minutes, while stirring occasionally.
  4. Cool completely, blend in the mixer till smooth.
  5. Transfer it to a deep non-stick pan, add ¾ cup of water, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  6. Heat the oil in a small non-stick pan, add the mustard seeds, cumin seeds, onion seeds, garlic and curry leaves and sauté on a medium flame for 1 minute.
  7. Pour the above tempering into the tomato-mixture, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  8. Serve the tamatar ka kut hot.

Tamatar ka kut is made of 2 1/2 cups roughly chopped tomatoes,1/4 cup peanuts, 1 tbsp sesame seeds (til), 1/4 cup dry grated coconut, 1 tsp cumin seeds (jeera), 1 tsp chilli powder, 1 tsp turmeric powder (haldi), 1 tsp coriander (dhania) powder, 1 tsp garlic (lehsun) paste, 1 tsp ginger (adrak) paste, 1 1/2 tbsp tamarind (imli) pulp, 1/2 tsp sugarsalt to taste, 2 tsp oil, 1/2 tsp mustard seeds ( rai / sarson), 1/2 tsp cumin seeds (jeera), 1/4 tsp nigella seeds (kalonji), 1 1/2 tsp grated garlic (lehsun) and 4 to 5 curry leaves (kadi patta)

How to select tomatoes, tamatar

  1. Select tomatoes that are round, full and feel heavy for their size, smooth skinned with no wrinkles, cracks, bruises or soft spots. 
  2. They should not have a puffy appearance since this indicates that they will be of inferior flavour and will cause excess waste during preparation. 
  3. Ripe tomatoes will yield to slight pressure and will have a noticeably sweet fragrance. 
  4. The skin should be firm and not shrivelled. 
  5. Choose tomatoes that have a deep rich colour. Not only is this one of the signs of a delicious tasting tomato, but the deep colour also indicates that it has a greater supply of the health-promoting phytonutrient red pigment, lycopene.

  1. For the peanut coconut powder, in a small non-stick pan add the 1/4 cup peanuts.
  2. Add 1 tbsp sesame seeds (til).
  3. Add 1/4 cup dry grated coconut.
  4. Add 1 tsp cumin seeds (jeera).
  5. Dry roast on a medium flame for 3 minutes. Keep aside to cool slightly.

This tamatar ka kut is so yummy I made this for my family get-together i tried this kut, it was so yummy, everyone loved it with the jeera rice.... Super tasty
