Stuffed Apples with Rabri

Baby apples poached in a saffron-flavoured sugar syrup are stuffed with a mixture of cottage cheese and pistachios and served with rabdi.
For the stuffed apples- Combine the sugar and 1½ cups water in a deep pan, mix well and bring to boil, while stirring continuously.
- Add the saffron mixture and mix well.
- Remove from the flame and keep aside.
- Core the apples and scoop the insides and discard the inside part.
- Add the apples to the syrup, mix well and simmer for 5 to 6 minutes or till the apples become soft, turning them twice in between.
- Remove and drain the apples and keep aside.
- Divide the filling mixture into 6 equal portions and stuff each portion in one apple. Keep aside.
For the rabri- Heat the milk in a broad non-stick pan and simmer while stirring continuously, till the milk is reduced to 1/3rd.
- Add the sugar and saffron, mix well and simmer for more 15 minutes or till the sugar is completely dissolved and the milk becomes thick and creamy.
- Remove from the flame and keep aside.
How to proceed- Just before serving, pour the rabri in a non-stick pan, place the stuffed apples carefully and heat on a medium flame to make the rabri warm.
- Serve immediately
