Ingredients

For Spinach Roti
5 tbsp spinach (palak) puree
1 cup whole wheat flour (gehun ka atta)
2 tbsp besan (bengal gram flour)
1/2 tsp green chilli paste
1/2 tsp garlic (lehsun) paste
salt to taste

ghee for smearing
Method

    For spinach roti
  1. To make spinach roti, in a deep bowl, combine the wheat flour, spinach purée, besan, green chilli paste, garlic paste and salt. Gradually add enough water and knead into a soft dough.
  2. Divide the dough into 8 equal portions.
  3. Roll a portion of the dough into a 275 mm. ( 7”) diameter circle using a little whole wheat flour for rolling.
  4. Heat a non-stick tava (griddle) on a high flame and when hot, place the roti gently over it.
  5. Cook it till small blisters appear on the surface. Turn over the roti and cook for few more seconds.
  6. Cook it on an open flame till it puffs up and brown spots appear on both the sides
  7. Repeat with the remaining dough portions to make 7 more rotis.
  8. Smear ghee on top of the spinach roti and serve immediately.
