Ingredients

For Aloo Palak Roti
1 cup boiled , peeled and mashed potatoes
1 cup finely chopped spinach (palak)
2 cups whole wheat flour (gehun ka atta)
1/2 cup besan (bengal gram flour)
salt to taste
4 tbsp fresh curd (dahi)
1 tbsp finely chopped green chillies
1/2 tsp turmeric powder (haldi)
1 tbsp peanut oil
whole wheat flour (gehun ka atta) for rolling
12 tsp peanut oil for cooking

    For aloo palak roti
  1. To make aloo palak roti, combine all the ingredients in a deep bowl, mix well and make a soft smooth dough using water.
  2. Divide the dough into 12 equal portions.
  3. Roll out each portion of the dough into a 150 mm. (6”) diameter circle with the help of a little whole wheat flour.
  4. Heat a non-stick tava (griddle) and cook the roti using 1 tsp of oil , till golden brown spots appear on both the sides.
  5. Repeat with the remaining dough to make 11 more rotis.
  6. Serve the aloo palak roti hot with curds and pickle of your choice.

  4. Add besan. Alternatively, you can even add jowar, bajra, nachni atta to fortify the aloo palak roti dough.

  7. Add finely chopped green chillies. Add more or less as per the spice level you like. Skip the green chilli, if you are serving kids.

  11. Mix well and make a soft smooth dough using little water.
  12. Divide the aloo palak roti dough into 12 equal portions.
  13. Roll out a portion of the dough into a 150 mm. (6”) diameter circle with the help of a little whole wheat flour.
  14. To cook aloo palak roti heat a non-stick tava (griddle) and place the aloo palak roti carefully.
  15. Cook aloo palak paratha using 1 tsp oil till golden brown spots appear on both the sides. You may use butter or ghee to cook the aloo palak paratha.
  16. Flip and cook the aloo palak roti until golden brown in color from both sides. Press it gently using a spatula while roasting.
  17. Remove the potato spinach roti on a plate.
  18. Repeat with the remaining dough to make 11 more alu palak rotis.

These rotis were very easy to make. I ate it with curds and pickle and it was yumm...instead of palak at times i even add coriander or phudina and it taste equally nice....
