Sojji is a traditional sweet dish prepared from suji or semolina which is roasted in ghee and then cooked with sugar and nuts.

Ingredients
1 cup semolina (rava / sooji) (rava)
1/2 cup sugar
3 cups water
4 tbsp ghee
6 cashewnuts (kaju)
2 cardamoms (elaichi)
Method
    Method
  1. Roast the rava in one tablespoon of ghee to a golden brown colour.
  2. Keep aside. Bring water to a boil and add the sugar to it.
  3. After it has dissolved, add the rava while constantly stirring the mix.
  4. After all the rava has been added, pour the ghee on it and cook for some more time.
  5. Add powdered cardamom seeds and mix well.
  6. Remove from fire when the rava is cooked well.
  7. Garnish with cashews roasted in ghee.
