  1. To make punjabi chole, in a pressure cooker add soaked kabuli chana, cinnamon, cloves, blackpepper, green chillies, tea bags, 2 cups of water and salt to taste.
  2. Mix well, close the lid and pressure cook for 3 whistles. Allow the steam to escape then open the lid and discard the tea bags.
  3. Heat ghee in a deep pan or kadhai, add cumin seeds, ginger and garlic, sauté for few seconds.
  4. Add onions and sauté on medium flame for 3 to 4 minutes until it becomes light golden brown in colour.
  5. Add chole masala, chilli powder, amchur, kasuri methi and add ½ hot water, mix well and cook on medium flame for a minute.
  6. Add tomato pulp and salt to taste, cook on medium flame for 2 minutes, while stirring occasionally.
  7. Add the cooked kabuli chana, mix well and cook on medium flame for 5 minutes, while stirring occasionally.
  8. For the tempering, heat ghee in a small pan, add the ginger juliennes and green chillies, sauté for few seconds.
  9. Switch off the flame and add kashmiri chilli powder. Pour the tempering over the sabzi and mix well.
  10. Serve the punjabi chole recipe hot.

  2. Add 1 small cinnamon (dalchini) stick.
  3. Add 2 cloves (laung / lavang)
  4. Add black cardamom.
  5. Add 3 black peppercorns (kalimirch)
  6. Add 1 slit green chilli
  7. Add 2 tea bags.
  8. Add 2 cups of water.
  9. Add salt to taste.
  10. Mix well, close the lid and pressure cook for 3 whistles.
  11. Allow the steam to escape then open the lid.
  12. Discard the tea bags.

  1. Heat ¼ cup ghee in a deep pan or kadhai.
  2. Add ½ tsp cumin seeds (jeera).
  3. Add 1 tsp finely chopped ginger (adrak).
  4. Add 1 tbsp finely chopped garlic (lehsun).
  5. Sauté for few seconds.
  6. Add 1½ cups finely chopped onions.
  7. Sauté on medium flame for 3 to 4 minutes until it becomes light golden brown in colour.
  8. Add 1 tbsp chole masala
  9. Add 1 tsp chilli powder
  10. Add ½ tsp dried mango powder (amchur).
  11. Add 1 tbsp dry fenugreek (methi) leaves.
  12. Add ½ hot water.
  13. Mix well and cook on medium flame for a minute.
  14. Add ½ cup tomato pulp.
  15. Add salt to taste.
  16. Cook on medium flame for 2 minutes, while stirring occasionally.
  17. Add the cooked kabuli chana. 
  18. Mix well and cook on medium flame for 5 minutes, while stirring occasionally.
  19. For the tempering, heat 1 tbsp ghee in a small pan.
  20. Add 1 tbsp ginger (adrak) juliennes.
  21. Add 1 slit green chilli
  22. Sauté for few seconds.
  23. Switch off the flame and add ¼ tsp kashmiri chilli powder.
  24. Pour the tempering over the sabzi and mix well.
  25. Serve Punjabi chole hot.
