For punjabi chole- To make punjabi chole, in a pressure cooker add soaked kabuli chana, cinnamon, cloves, blackpepper, green chillies, tea bags, 2 cups of water and salt to taste.
- Mix well, close the lid and pressure cook for 3 whistles. Allow the steam to escape then open the lid and discard the tea bags.
- Heat ghee in a deep pan or kadhai, add cumin seeds, ginger and garlic, sauté for few seconds.
- Add onions and sauté on medium flame for 3 to 4 minutes until it becomes light golden brown in colour.
- Add chole masala, chilli powder, amchur, kasuri methi and add ½ hot water, mix well and cook on medium flame for a minute.
- Add tomato pulp and salt to taste, cook on medium flame for 2 minutes, while stirring occasionally.
- Add the cooked kabuli chana, mix well and cook on medium flame for 5 minutes, while stirring occasionally.
- For the tempering, heat ghee in a small pan, add the ginger juliennes and green chillies, sauté for few seconds.
- Switch off the flame and add kashmiri chilli powder. Pour the tempering over the sabzi and mix well.
- Serve the punjabi chole recipe hot.
