Ingredients

For The Green Paste
1 cup roughly chopped mint leaves (phudina)
1/2 cup roughly chopped coriander (dhania)
2 tsp roughly chopped green chillies
1 tsp roughly chopped garlic (lehsun)
1 tsp roughly chopped ginger (adrak)
1 tbsp freshly grated coconut
1/2 tsp cumin seeds (jeera)
salt to taste

Other Ingredients For Pudina Rice
1 cup long grained rice (basmati) , washed and drained
1 1/2 tbsp oil
1 cardamom (elaichi)
2 cloves (laung / lavang)
1 small stick cinnamon (dalchini)
1 bayleaf (tejpatta)
3/4 cup thinly sliced onions
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/2 cup chopped tomatoes

  1. Combine all the ingredients along with ¼ cup of water in a mixer and blend till smooth. Keep aside.

  1. To make pudina rice, soak the rice in enough water in a deep bowl for 30 minutes,. Drain and keep aside.
  2. Heat the oil in a pressure cooker, add the cardamom, cloves, cinnamon and bayleaf and sauté on a medium flame for 30 seconds.
  3. Add the onions and sauté on a medium flame for 2 minutes.
  4. Add the green paste, turmeric powder and chilli powder, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  5. Add the tomatoes, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  6. Add the rice, little salt and 2 cups of hot water, mix well and pressure cook for 4 whistles.
  7. Allow the steam to escape before opening the lid.
  8. Mix it gently and serve the pudina rice hot with curds.

For the green paste

  1. To make the green paste for  pudina rice recipe | pudina pulao | Indian style mint rice | pressure cooked pudina rice | in a mixer jar add roughly chopped mint leaves. The refreshing flavor of pudina gives the perfect zing to the mint leaves rice recipe.
  2. Add roughly chopped coriander. Make use of fresh mint and coriander leaves to make the green masala paste.
  3. Add roughly chopped green chillies.
  4. Add roughly chopped garlic.
  5. Add roughly chopped ginger.
  6. Add freshly grated coconut.
  7. Add cumin seeds.
  8. Add salt to taste and pour ¼ cup of water.
  9. Combine all the ingredients and blend till smooth. Keep aside. We will now begin making the mint pulao recipe. While we are going to pressure cook the pudina rice if you are in a hurry or want to make it quickly then make use of leftover rice to make mint rice recipe.

How to make Pudina Rice

  1. To prepare  pudina rice recipe | pudina pulao | Indian style mint rice | pressure cooked pudina rice | soak the rice in enough water in a deep bowl for 30 minutes.
  2. After half an hour, drain the rice and keep aside.
  3. To prepare mint pulao, heat the oil in a pressure cooker.
  4. Once the oil is hot, add the cardamom, add cloves, add cinnamon add bay leaf and sauté on a medium flame for 30 seconds or until aromatic.
  5. Add the onions.
  6. Mix well and sauté on a medium flame for 2 minutes or until the onions are translucent and cooked.
  7. Add the green paste.
  8. Add turmeric powder.
  9. Add chilli powder.
  10. Mix well and cook on a medium flame for 1 minute, while stirring occasionally. Do not overcook the masala paste otherwise it will lose the bright green colour.
  11. Add the tomatoes. While we have added only onions and tomatoes, you can add other veggies like green peas, French beans, carrots, cauliflower, mushroom etc.
  12. Mix well and cook on a medium flame for 1 minute, while stirring occasionally or until they turn soft and mushy.
  13. Add the rice. We have used long-grained basmati rice, but you can prepare pudina rice with regular short-grained rice too.
  14. Add a little salt and 2 cups of hot water. The amount of water required to cook the rice may vary according to brand, rice type and age of rice. You can get the detailed information to cook the rice on the backside of it’s package.
  15. Mix well and pressure cook Karnataka style pudina rice for 4 whistles. Allow the steam to escape before opening the lid.
