1¾ cups basmati rice
2" piece Ginger
¾ cup Curd
1½ cup Mint leaves
2 nos Bay leave
4-6 nos Green cardamoms
4 to 6 cloves (laung / lavang)3-4 nos.large cardamoms
8-10 nos. black peppercorns
3¼ cups water for cooking
3 tbsps. ghee
salt to taste
- 1. clean, wash and soak the rice in water for half an hour.
- 2. peel and grind the ginger to a paste and also whisk the curd.
- 3. wash and chop the pudina leaves reserving few for the garnish.
- 4. heat ghee in a thick-bottomed pan and add the bay leaves, green cardamoms, large cardamoms, cloves and black peppercorns.
- 5. when they begin to crackle, add the ginger paste and mix well. add the beaten curd and cook for 3 mins.
- 6. add water, bring to a boil and then add the salt for taste.
- 7. drain the water from the soaked rice and add it to the water and bring to a boil.
- 8. now add the chopped pudina leaves, mix lightly, cover and cook on low heat for about eight minutes or till the rice is completely cooked.
- 9. garnish with mint leaves and serve.
