For The White Sauce
1 tbsp butter
1 tbsp plain flour (maida)
1 cup milk
1/2 cup grated processed cheese
1/2 tsp dried oregano
salt and to taste
a pinch nutmeg (jaiphal) powder

For The Red Sauce
1 tbsp olive oil
1 tsp butter
2 tbsp finely chopped garlic (lehsun)
1/4 cup finely chopped onions
1 tbsp chopped basil
1/2 tsp kashmiri red chilli powder
1 cup fresh tomato pulp
1 tbsp tomato ketchup
1 tsp dried mixed herbs
1 tsp dry red chilli flakes (paprika)
salt to taste

Other Ingredients
2 cups cooked penne
1 tbsp finely chopped basil or fresh basil leaves
1/4 cup grated processed cheese
1 tbsp grated parmesan cheese

For white sauce

    For white sauce
  1. To make white sauce, heat the butter in a broad non-stick pan, add the plain flour and cook on a slow flame for 1 minute, while stirring continuously.
  2. Add the milk, mix well and cook on a medium flame for 1 minute, while stirring continuously.
  3. Add grated cheese, mix well and cook on a medium flame for 2 minutes, or till the sauce thickens, while stirring continuously.
  4. Add the oregano, salt, pepper and nutmeg powder, mix well and cook on a medium flame for 1 minute. Keep aside.

For red sauce

    For red sauce
  1. To make red sauce, heat olive oil and butter in deep non-stick pan, add garlic and sauté on a medium flame for 1 minute.
  2. Add onions and sauté on medium flame for 2 minutes.
  3. Add the basil leaves and kashmiri chilli powder and mix well.
  4. Add the tomato pulp, mix well and cook on medium flame for 2 to 3 minutes, while stirring occasionally.
  5. Add tomato ketchup, mixed herbs, chilli flakes and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
