  1. To make phulkopir cutlet, in a deep bowl, add cauliflower, mashed chickpeas, paneer, onions, coriander, sesame, ginger garlic paste, turmeric powder, chilli powder, cumin powder, chaat masala, besan, salt and pepper powder.
  2. Mix all the ingredients very well using your hands. Divide into 8 equal portions.
  3. Roll and shape each portion of the mixture into 2 inch (50mm) diameter flat cutlet.
  4. Heat 1 tsp oil in a broad nonstick pan and place all the prepared cutlets.
  5. Cook them on medium flame from both the sides using 1 tsp oil for cooking the cutlets.
  6. Serve phulkopir cutlet hot with green chutney.

  1. To make phulkopir cutlet, in a deep bowl, 1 cup grated cauliflower.
  2. Add ½ cup boiled and mashed kabuli chana (white chick peas).
  3. Add ½ cup grated paneer (cottage cheese).
  4. Add ¼ cup finely chopped onions.
  5. Add 2 tbsp finely chopped coriander (dhania).
  6. Add 1 tbsp sesame seeds (til).
  7. Add 1 tsp ginger-garlic (adrak-lehsun) paste.
  8. Add ½ tsp green chilli paste.
  9. Add ¼ tsp turmeric powder (haldi).
  10. Add ½ tsp chilli powder.
  11. Add ½ tsp cumin seeds (jeera) powder.
  12. Add ½ tsp chaat masala.
  13. Add salt to taste.
  14. Add pepper to taste.
  15. Add 1 tbsp besan (bengal gram flour).
  16. Mix all the ingredients very well using your hands.
  17. Divide into 8 equal portions.
  18. Roll and shape each portion into 2 inch diameter flat cutlet.
  19. Heat 1 tsp oil in a broad nonstick pan.
  20. Place all the prepared cutlet.
  21. Cook them on medium flame from both the sides using 1 tsp oil for cooking the cutlets.
  22. Till they turn golden brown in colour from both the sides.
  23. Serve phulkopir cutlet hot with green chutney.

pro tips to make phulkopir cutlet

  1. To make the cutlets healthier, we have used boiled and mashed chickpeas instead of boiled and mashed potatoes.
  2. If you feel the mixture is too dry, then add little grated paneer and mix it well.
  3. Make sure to make flat cutlets so that they get perfectly cooked .
