Method for Penne in Pumpkin Sauce

  1. To make the pumpkin sauce, we first have to cook the pumpkin. For that heat enough water in a deep non-stick pan and let it come to a boil.

  2. Add the red pumpkin to the water once it starts to boil.
  3. Mix well and cook on a medium flame for 8 to 10 minutes or till the red pumpkin is soft, while stirring occasionally. It is important for the pumpkin to be soft so that it can be easily blended into a sauce. Try breaking the pumpkin with the ladle or spatula to know whether it is cooked.
  4. Drain and keep aside to cool completely.
  5. Once cooled, add the pumpkin to the mixer jar along with milk.
  6. Blend this mixture thoroughly till smooth and keep aside. This is our basic pumpkin sauce recipe which is ready.
  7. Heat the butter in a broad non-stick pan.
  8. Once the butter melts, add the onions and garlic. This will give the basic savory taste to the Penne in Pumpkin Sauce.

  9. Sauté on a medium flame for 1 minute or till slightly translucent.
  10. Now add the broccoli. The broccoli is blanched beforehand or else it won't cook entirely while sautéing.
  11. Also add the chilli flakes, mixed herbs and salt and sauté on a medium flame for 1 to 2 minutes
  12. Add the prepared pumpkin sauce to the pan.
  13. Also add the penne, mix gently and cook on a medium flame for 1 to 2 minutes, while stirring occasionally till the pasta is coated well with the sauce. You can use any shape of pasta, it is not necessary to use penne.
  14. Serve immediately with bread rolls or cool it completely and pack it in a tiffin.

I made the penne pasta but my child did not much like it he wants pungent can u give something pungent n post some recipes of paneer like shahi n veg
