Party Hummus Platter recipe - How to make Party Hummus Platter

Preparation Time:    Cooking Time:    Total Time:     9Makes 8 to 10 serving

Ingredients

For Black Eyed Pea Hummus
1 cup cooked black eyed peas (about 1/2 cup dry) reserve 2 tbsp cooking liquid
1 tsp garlic (lehsun) minced
2 tbsp fresh lemon juice or to taste
salt to taste
1 tbsp olive oil
1/3 tsp cumin seeds (jeera) powder
2 tbsp tahini paste
1 tbsp olive oil , for drizzling on hummus
dry red chilli flakes (paprika) powdered for sprinkling on hummus

For Almond Hummus
1 cup almonds (badam)
3 tbsp tahini paste
3 tbsp olive oil
2 tbsp lemon juice or to taste
1/4 to 1/2 cup water
1 tsp chopped garlic (lehsun)
1 tsp cumin seeds (jeera)
1/2 tsp freshly ground black peppercorns (kalimirch)
1/3 tsp salt or to taste
1 tbsp olive oil , for drizzling on hummus
dry red chilli flakes (paprika) powdered for sprinkling on hummus

For Green Chickpea Hummus
1 cup fresh green chickpea or 1/2 cup dry green chickpea reserve 2 tbsp cooking liquid
2 tbsp fresh lemon juice
3 tbsp olive oil
3 tbsp tahini paste
1 stalk green garlic (lehsun) , roughly chopped (use whole bulb to greens)
1/2 tsp dried oregano
1/2 tsp freshly ground black peppercorns (kalimirch)
salt to taste
1 tbsp olive oil , for drizzling on hummus
dry red chilli flakes (paprika) powdered for sprinkling on hummus
Method

For Black Eyed Pea Hummus

    For Black Eyed Pea Hummus
  1. Put cooked black eyed peas into the food processor with garlic, lemon juice, salt and olive oil and process until black-eyed peas are pureed.
  2. Add the cumin seeds powder, tahini paste and 1 to 2 tbsp cooking liquid and process until it's combined.
  3. Put hummus into serving bowl, drizzle with olive oil, and sprinkle with paprika.

For Almond Hummus

  1. Soak almonds in water overnight(6-12 hours), drain and rinse once with fresh water.
  2. In a food processor, grind the drained and rinsed almonds. Add the remaining ingredients, minus half of the water.
  3. Begin again to puree the ingredients together, adding more water until you reach a creamy texture. Put hummus into serving bowl, drizzle with olive oil, and sprinkle with paprika.

For Green Chickpea Hummus

  1. Cover the fresh green chickpea with water in a saucepan and bring to a boil. Cook about 20 minutes or until the beans are tender (not mushy). If using dry green chickpea, soak it for 4 hrs in water and cook in a pan covered with water until the beans are tender (not mushy). Drain and reserve 2-3 tbs
  2. Put green chickpea, lemon juice, olive oil, tahini, green garlic, oregano, 2 tbsp water, and salt into the food processor fitted and process until the hummus is smooth.
  3. Put hummus into serving bowl, drizzle with olive oil, and sprinkle with paprika.
  4. Serve with pita bread,crackers, tortilla chips, lavash or your choice of dippers.
