Ingredients

For The Koftas
3 to 4 spinach (palak) leaves , finely chopped
1 cup finely chopped coriander (dhania)
1/4 cup cashewnuts (kaju)
1/4 cup raisins (kismis)
1/2 cup grated paneer (cottage cheese)
1 tsp ginger-green chilli paste
1/2 tsp garam masala
salt to taste
3 to 4 potatoes , boiled and mashed
5 to 6 bread slices , soaked and mashed

For The Curry
3 to 4 tomatoes
2 to 3 onions
1/2 cup cashewnut (kaju) paste
1/2 cup grated coconut
1 tsp garam masala
1 tsp ginger-green chilli paste
2 tsp chilli powder
1 tsp turmeric powder (haldi)
2 tsp coriander-cumin seeds (dhania-jeera) powder
2 tsp garam masala
1/2 cup curds (dahi)
Method

  1. Combine the potatoes, bread slices and salt and mix well.
  2. Keep aside.
  3. Combine the remaining ingredients in a bowl and mix well.
  4. Divide the potato and spinach mixture into equal portions and keep aside.
  5. Flatten a portion of potato mixture in your palms and place a portion of spinach mixture in between and cring the sides together to seal the edges.
  6. Repeat the same to make more koftas.
  7. Heat the oil in a kadhai adn deep fry the koftas till they turn golden and crisp from all the sides.
  8. Drain on an absorbent paper and keep aside.

  1. Heat the oil in a kadhai and add the garam masala and saute for 10 seconds.
  2. Add the onion,s, tomatoes and coconut and saute till the oil gets separated.
  3. Add the curd and mix well and cook till oil leaves the sides.
  4. Remove from the flame and cool and blend in a mixer to a smooth paste.
  5. Heat 2 tsp oil in a pan and add 2-3 dry red chilies and basil leaves and saute for 10 seconds.
  6. Add this to the paste and add sufficient water and salt and cook for 10 minutes.
  7. Just before serving, add the koftas, mix well and serve hot.
