A mouth watering South Indian curry which features a spectrum of flavours and colours is the very famous Malabari curry. Veg malabar curry is a perfect comfort food. It is really very simple to make and has the unique flavour of coconut, which also gives richness to the gravy.

The process of making this malabari curry is quite quick and easy. Every Indian household has their own style of making it and this is our version of the very famous Veg malabar curry. The traditional curry is made with fish and is a famous dish from Kerala but we have an alternative for vegetarians where we have used assorted vegetables in cooking the malabari curry.

The process is started by dry roasting all the ingredients like grated coconut, curry leaves, green chillies, garlic, cinnamon, cloves, pepper corns and a dry red chilli on a medium flame and are blended into a smooth paste using little water. This paste is used as a base to the South Indian style malabar curry.

Further, to make the final dish, take oil you can even make use of coconut oil if you wish to. Once the oil is hot, onions are sauted, next add in tomatoes. Once cooked, all the vegetables like potatoes, carrots, cauliflower and French beans are cooked by addition of water and once the vegetables are cooked, and finally the prepared paste is added and cooked and South Indian style malabar curry is ready to be served!!

An assortment of veggie of multiple colours, flavours and textures, while a tongue licking paste of coconut and spices which gives it luscious taste and amazing mouthfeel.

The veg malabar curry is also very versatile, as a hot bowlful of this vegetable dish can perfectly match a range of dishes, be it Rice, Roti, Dosa, Uttapa, Appam or Idiyappam.

  1. Heat a broad non-stick pan, dry roast all the ingredients on a medium flame for 4 minutes.
  2. Cool slightly and blend in a mixer till smooth using ½ cup of water. Keep aside.

  1. To make malabari curry, heat the oil in a deep non-stick kadhai, add the onions and sauté on a medium flame for 2 minutes.
  2. Add the tomatoes, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  3. Add all the vegetables and sauté on a medium flame for 2 minutes.
  4. Add 1 cup of water and salt, mix well and cover with a lid and cook on a medium flame for 10 minutes, while stirring occasionally.
  5. Add the prepared paste and ¼ cup of water, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  6. Serve the malabari curry hot.

For the paste

  1. For making the paste for South Indian vegetable curry, heat a broad non-stick pan, add the coconut.
  2. Next, add curry leaves.
  3. Add roughly chopped green chillies and garlic.
  4. Also, add 1 stick cinnamon, 1 clove, 2 black peppercorns, 1 whole dry kashmiri red chilli in the pan.
  5. Dry roast all the ingredients on a medium flame for 4 minutes or till they are slightly brown and aromatic.
  6. Remove from the flame and cool slightly.
  7. Transfer the paste to a mixer jar.
  8. Blend in a mixer till smooth using ½ cup of water. Keep aside.

How to make Malabari curry

  1. To prepare the Malabari vegetable curry, heat the oil in a deep non-stick kadhai. We have used regular vegetable oil but, you can use coconut oil or even butter or ghee for preparing the South-Indian vegetable curry.
  2. Once the oil is hot, add the onions.
  3. Sauté them on a medium flame for 2 minutes or until the onions soften and turn light golden.
  4. Add the tomatoes.
  5. Mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  6. Add all the vegetables starting with French beans.
  7. Next, add the carrot cubes.
  8. Add the cauliflower florets.
  9. Also, add the potato cubes.You can use any vegetables of your choice and liking depending upon the availability.
  10. Mix well and sauté on a medium flame for 2 minutes.
  11. Add 1 cup of water and salt.
  12. Mix well and cover with a lid and cook on a medium flame for 10 minutes, while stirring occasionally.
  13. Add the prepared paste.
  14. Add ¼ cup of water. Adjust the consistency of the curry as per your desire.
  15. Mix  malabari curry | veg malabar curry | South Indian malabari curry |  well and cook on a medium flame for 3 minutes, while stirring occasionally.

I have never tried anything malabar style so far. I made it as a side dish for Kerala paratha and it tasted lip smacking! Thanks for the recipe. I made a small addition to the recipe. Added 1/2 tsp of sugar and a little milk in the end. This enhanced the taste even more. Loved the recipe.

Long back Smt.Tarladalal suggested the above mentioned curry as advt for some edible oil which I forgot in that recipe she said to boil tomatoes and she also said to roast khus khus, dhania etc., and to grind raw garlic and onions.
