Lemon Barley squash is a thick concentrate of lemon and barley juice preserved with lots of sugar.

Ingredients

300 gms lemon juice
1 kg sugar
2 tbsp barley (jau) powder
tip of teaspoon sodium benzoit
1 cap of lemon essence
Method


  1. Cover sugar with water ,1\2" above sugar.
  2. Boil, clean the froth.
  3. Add diluted barley powder ,boil ,till transparent.
  4. Syrup should be sticky ,but no thread.
  5. Close fire.
  6. Add essence.
  7. Add diluted sodium benzoit.
  8. Bottle hot syrup in boiling bottel ,leaving two inches space vacant ,cap tightly.
