For lauki paratha- To make lauki paratha recipe, squeeze the grated lauki in a muslin cloth to remove all the excess moisture. Do not discard the water.
- Transfer the squeezed bottle gourd in a deep bowl and add all the remaining ingredients of the stuffing.
- Mix well and divide the stuffing into 6 equal portions.
- Combine wheat flour, plain flour, oil, salt to taste and the lauki water.
- Knead into a soft dough using little water if needed. Divide the dough into 6 equal portions.
- Roll each portion of the dough into a 75 mm. (3”) diameter circle and place a portion of the stuffing in the center of the circle.
- Bring together all the sides in the center, seal tightly and again roll out into a circle of 150 mm. (6 inch) diameter circle, using a little whole wheat flour for rolling.
- Heat a non-stick tava (griddle) and cook the parathas on a medium flame using 1 tsp ghee till golden brown spots appear on both the sides.
