Brinjal rice or vangi bhat is a traditional Indian rice preparation with stir fried spice filled brinjals or vangi added to the rice along with a selection of Indian spice powders and coconut shavings.

Ingredients
3 cups steamed rice (chawal)
1/4 kg finely chopped brinjals (baingan / eggplant)
2 medium sized onions , chopped
1 tsp mustard seeds ( rai / sarson)
1 tsp urad dal (split black lentils)
2 green chillies , chopped
1 1/2 tsp garam masala
3 tbsp oil
curry leaves (kadi patta) (kadi patta)
salt to taste

For The Powder
1 tbsp coriander (dhania) seeds
1 tsp chana dal (split bengal gram)
4 to 6 red chillies
1 tsp oil
Method
    Method
  1. Take the oil in a kadai and add the mustard seeds and urad dal.
  2. When the mustard seeds start crackling add the curry leaves and green chillies.
  3. Add the onions and fry till it becomes slightly brown.
  4. Toss in the chopped brinjals and let it cook for a few minutes.

For the powder

    For the powder
  1. Fry the coriander seeds, bengal gram dal and the red chillies in oil till it becomes light brown in colour and then grind coarsely into a powder.
  2. Add the garam masala, salt and the prepared powder and fry for a few minutes.
  3. Add the boiled rice and mix well.
  4. Serve hot with papads,chips or raita.
