500 gms potatoes
4 green chillies
1 " piece of ginger (adrak)
5 to 6 cloves of garlic (lehsun)
1/2 tsp mustard seeds ( rai / sarson)
pinch of asafoetida (hing)
5 to 6 curry leaves (kadi patta)
1 tbsp lemon juice
2 tbsp chopped coriander (dhania)
1/2 tsp sugar
1/4 tsp turmeric powder (haldi)
salt to taste

For Batter
1 1/3 cups besan (Bengal gram flour)
salt to taste
1/2 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1/4 tsp baking soda
1 tbsp oil

    Method of preparation
  1. Boil and peel potatoes and roughly mash them.
  2. Grind green chillies, ginger and garlic together in a mixer.
  3. Heat oil in pan add mustard seeds, when they crackle, add curry leaves, asafoetida.
  4. Remove from heat.
  5. Add mashed potato, prepared green paste, chopped coriander leaves, salt, sugar and mix well.
  6. Make equal sized balls of the above mixture. keep aside.
  7. Take gram flour in a bowl, add soda, turmeric powder, red chilli powder, salt, hot oil and enough water to make a coating consistency batter.
  8. Dip the potato mixture ball in the batter and deep fry in medium hot oil till golden brown.
  9. Serve hot batata wadas with coconut chutney or hot and spicy garlic chutney.
