Zucchini and cheese get along so beautifully together in this masterpiece! Juicy slices of zucchini are baked with a coating of bread crumbs and cheese, which gives it a very unique and enjoyable texture.


Since the zucchini slices are dipped in olive oil before coating with other ingredients, you might find that some of the oil oozes out onto the butter paper on baking. That is normal, and not something to worry about! You will really love the gooey yet crisp texture of the cheesy crust – but make sure you have the Baked Cheesy Zucchini Slices fresh and hot, before they get chewy.

Ingredients
1/2 cup freshly grated parmesan cheese
2 cups zucchini slices (unpeeled)
1/2 cup bread crumbs
salt to taste
olive oil for dipping
Method
    Method
  1. Combine the bread crumbs, cheese and salt in a deep bowl, mix well and keep aside.
  2. Dip each zucchini slice in the olive oil, then roll in the bread crumbs mixture till they are coated from all the sides.
  3. Place them on a butter paper, then place on a baking tray and bake in a pre-heated oven at 200°c (400°f) for 20 to 25 minutes, turn them over and cook on another side for 10 to 12 minutes.
  4. Serve immediately.

Can I use cheddar or mozerella cheese instead of parmesan cheese?

Tarla Dalal    Hi Manisha, Mozzarella surely won''t work as the cheese would melt on baking. You can try using cheddar, we have not tried though. Happy Cooking!

Baked Cheesy Zucchini Slices makes a lovely starter. Parmesan cheese coats the Zucchini really well and when baked a nice cheesy aroma comes. Very innovative recipe and thanks for sharing.
