A delightful preparation of crispy hakka noodles served with vegetables and a tangy sauce. This veg american chop suey is not an authentic Chinese one, but an invention of American Chinese migrant population which moved from China and settled in the US. We have converted the non vegetarian recipe to veg american chop suey.
I would like to share some important tips to make the perfect american chop suey. 1. Deep-fry hakka noodles till it turns crispy and golden brown in colour from both the sides on a medium flame. If you fry noodles on a low flame then they will absorb more oil and if you fry them on high flame then they will turn brown immediately but not turn crispy. 2. Basically, you can add any vegetables of your choice to veg american chop suey like broccoli, mushroom, purple cabbage and zucchini. 3. We have added sugar to the american chop suey to get the sweet and sour taste. 4. If you are serving american chop suey hours after preparing then adjust the consistency of chopsuey sauce before serving by reheating and adding little water if required.

For the crispy noodles- 1. Heat the oil in a deep non-stick kadhai, add 2 cups of hakka noodles and spread it evenly to form a layer and deep-fry till it turns crispy and golden brown in colour from both the sides. Drain on an absorbent paper.
- 2. Repeat step 1 to deep-fry the remaining noodles. Keep aside.
For the american chop suey topping- Combine the cornflour with 1½ cups of water in a deep bowl, mix well and keep aside.
- Heat the oil in a deep non-stick pan, add the onions and sauté on a medium flame for 1 minute.
- Add the capsicum, carrot and cabbage and sauté on a medium flame for 2 to 3 minutes.
- Add the boiled hakka noodles and sauté on a medium flame for 1 minute.
- Add the tomato ketchup and chilli sauce, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
- Add the cornflour-water mixture, vinegar, sugar and salt, mix well and cook on a medium flame for 3 to 4 minutes or till the sauce thickens, while stirring occasionally.
- Divide it into 2 equal portions and keep aside.
How to proceed to make american chop suey- Just before serving, place one portion of the crispy noodles on a serving dish and top it with one portion of the american chop suey evenly over it.
- Repeat step 1 to make 1 more plate of american chop suey.
- Serve american chop suey immediately.

For preparing crispy noodles at home for American Chop Suey, Veg American Chopsuey, boil enough water in a deep pan.

Add salt to taste and oil.

Add the hakka noddles and mix well. We have taken 1 ½ packet of hakka noodles. Per packet of hakka noodles is approx. 150 gms.

Boil the hakka noodles for 8 minutes or till they are 70-80% cooked. Do not overcook or else they will turn soggy. Drain them using a strainer.

Refresh them under cold water so they do not stick to each other and the internal cooking process stops. Keep aside to cool.

Heat the oil in a deep non-stick pan.

Once the oil is hot, add 2 cups of boiled hakka noodles. Spread it evenly to form a nest like layer.

Once the bottom layer has turned golden brown, flip it using a pair of tongs.

Deep-fry till it turns crispy and golden brown in colour from both the sides on a medium flame. If you fry noodles on a low flame then they will absorb more oil and if you fry them on high flame then they will turn brown immediately but not turn crispy.

Drain on an absorbent paper to remove all the excess oil.

In the same way,deep fry the remaining 2 cups of noodles to make one more batch of crispy noodles.

For making the American Chop Suey, Veg American Chop suey topping, we will require cornflour slurry. For that, in a deep bowl take 1 ½ tbsp of cornflour.

Combine the cornflour with 1½ cups of water.

Mix well to form a lump free slurry using a whisk and keep aside.

For making the chopsuey topping, heat the oil in a deep non-stick pan or wok.

Add the onions and you can also add garlic if you wish to.

Sauté on a medium flame for 1 minute.

Add the capsicum. To make the American chop Suey more colorful, add sliced bell peppers.

Add the carrot. You can even toss in some diagonally cut French beans.

Add the cabbage. Basically, you can add any vegetables of your choice like broccoli, mushroom, purple cabbage, zucchini etc.

Sauté on a medium flame for 2 to 3 minutes.

Add the boiled hakka noodles.

Mix well and sauté on a medium flame for 1 minute.

Add the tomato ketchup. It provides a tangy flavor to the chopsuey.

Add the chilli sauce, mix well and cook on a medium flame for 1 minute, while stirring occasionally. You can also add soy sauce.

Add the cornflour-water mixture. This helps in thickening the chopsuey sauce.

Also, add vinegar

Add sugar. American Chop Suey is pleasantly sweet hence we add the sugar.

Mix well and cook on a medium flame for 3 to 4 minutes or till the chop suey sauce thickens and coats the vegetables, while stirring occasionally.
