All Green Paratha recipe - How to make All Green Paratha

Preparation Time:    Cooking Time:    Total Time:     9Makes 8 to 10 serving

Ingredients

For The Stuffing
2 tbsp moong (whole green gram) sprouts
2 tbsp green peas
2 tbsp green toovar (arhar) dal
2 tbsp green chawli (cow pea / lobhia)
2 tbsp fresh green chana
1 cup chopped green onions
1 tsp chopped green garlic (hara lehsun)
1/4 cup chopped coriander (dhania)
4 green chillies chopped
salt to taste
1 tsp sugar
3 tsp lemon juice
1 tsp garam masala
1/2 tsp white pepper powder
2 tsp oil

For The Dough
200 gms wheat (gehun) flour
salt to taste
2 tsp oil
1 cup blanched spinach (palak) puree
1/2 tsp green chilli paste
water for binding the doughB1_spell!

oil for shallow frying the parathas
Method

For the stuffing

  1. In a mixer jar put moong sprouts,green peas,toovar dal,green chawli,green chana,green onions,
  2. green garlic,green chilly,coriander and grind to a coarse paste by adding very little water if required and keep aside.
  3. Heat oil in a kadhai and put this grinded paste and saute till all the pulses get cooked very well.
  4. Then add salt,sugar,lemon juice,garam masala,white pepper powder and mix well.
  5. Off the flame and allow the mixture to cool to room temperature.

  1. Mix wheat flour,salt,oil, spinach puree,chilli paste and add water if required to bind a medium soft dough.
  2. Make balls of this dough and roll to a puri sized roti by using wheat flour.
  3. Place 2 tsp of the stuffing prepared and close from all the sides and again roll to a roti.
  4. Shallow fry these parathas using oil on a hot tawa till golden brown and serve hot with butter.
