A classic mexican dip or side. The avacados are mashed with a fork and then blended with onions, tomatoes, green chillies and lemon juice. Serve it nachos or use it as a filling in fajitas and tacos.

Makes 1 cup

2 ripe avocados
1/2 tbsp lemon juice
1 onion , chopped
1 tomato , chopped
1 green chilli , chopped
salt to taste

  1. Cut the avocados in halves. Remove the centres and mash with a fork.
  2. Add the lemon juice to prevent darkening and then mix in the remaining ingredients and mash with the back of a fork.
  3. Serve cold as a dip with crackers, corn chips, vegetables etc.
