Ingredients

Method
  1. Blanch the spinach in hot water for a few seconds.
  2. Transfer it into cold water and drain.
  3. Purée the spinach to a paste and keep aside.
  4. Heat the oil in a non-stick pan, add the cumin seeds and allow them to crackle.
  5. Add the onions, garlic, ginger-green chilli paste and cook till the onions turn golden brown in colour, adding a little water to moisten if the onions burn.
  6. Add the spinach purée and tomatoes along with the ½ cup of water and cook for 3 minutes.
  7. Add the kabuli chana and salt and simmer for another 2 minutes.
  8. Serve hot with parathas.

This recipe was very easy to make, light and tasty. Ensure that the onions are well cooked. Love the healthy spinach!
