Bengali khichdi, you will love this exotic khichdi from bengal – an appetizing, perfect combination of rice, masoor dal and mixed veggies. With loads of protein, fibre and iron and minimum fat, this one sure is a delectable way to lose weight.

Ingredients

25 mm (1") piece cinnamon (dalchini)
2 cloves (laung / lavang)
2 cardamoms
1 tsp ghee
1/2 cup finely chopped onions
2 bayleaves
2 tsp crushed garlic (lehsun)
2 tsp grated ginger (adrak)
1 cup uncooked rice (chawal) , washed , soaked and drained
3/4 cup masoor dal (split red lentil) , washed and drained
1 cup potato cubes
10 to 12 french beans cut into small pieces
1/3 cup fresh green peas
2 tsp finely chopped green chillies
1/2 tsp turmeric powder (haldi)
salt to taste

For The Garnish
ginger juliennes

Method
  1. Combine the cinnamon, cloves and cardamom and coarsely ground them using a mortar-pestle (khalbhatta). Keep aside.
  2. Heat the ghee in a deep non-stick pan, add the ground spices, onions, bayleaves, garlic and ginger, mix well and sauté on a medium flame for 2 to 3 minutes.
  3. Add the rice, masoor dal, potatoes, french beans, green peas, green chillies and turmeric powder, mix well and sauté on a medium flame for another 2 minutes.
  4. Add 4 cups of hot water and salt, mix well and cover and cook on a medium flame for 10 to 12 minutes, stirring occasionally.
  5. Lower the flame and cook for another 10 to 15 minutes or till the vegetables are soft and the rice is cooked. Serve hot garnished with ginger juliennes.
