This is a simple and easy vegetable oats pancake recipe made from oats, carrots, spinach, coriander, green chillies and peanut oil. The Indian style oats pancake make a healthy breakfast or perfect for an evening snack.

Notes on vegetable oats pancake recipe. 1. To begin making the Vegetable Oats Pancake, we would require oats flour. Put 1 cup quick rolling oats in a small mixer jar. 2. Pulse until they have turned into a fine powder. You can store the oats flour in an airtight jar for 2 to 3 weeks. 3. We have used peanut oil in this recipe so that it becomes a healthy veg oats pancake, but you are free to use any vegetable oil you wish.

For vegetable oats pancake
 

  1. To make vegetable oats pancakes, combine all the ingredients, along with 1 cup of water in a deep bowl and mix well to form a batter of dropping consistency.
  2. Heat a non-stick tava (griddle) and grease it using ¼ tsp peanut oil.
  3. Pour a spoonful of the batter on it and spread in a circular motion to make 100 mm. (4”) round circle.
  4. Cook, using ¼ tsp of peanut oil, till it turns light brown in colour from both sides.
  5. Repeat with the remaining batter to make 6 more pancakes.
  6. Serve the immediately with dahiwali phudina ki chutney or green chutney.

    11. Heat a non-stick tava (griddle) and grease it using ¼ tsp oil.
    12. Pour a spoonful of the batter on it and  Spread in a circular motion to make 100 mm. (4") thick circle.
    13. Cook Vegetable Oats Pancake using ¼ tsp of peanut oil, till it turns light brown in colour from both sides.

I tried this recipe.. it was yummy in taste and healthy too.. but it was little soggy from inside even after 15mins of medium cooking.. I am not sure if it''s coz of oats nature of becoming soggy after cooking.
