What is dangar chi bhaji made of?

  1. Dangar chi bhaji is made of 3 cups red pumpkin (bhopla / kaddu) (kaddu) cubes, 2 tsp oil, 1/2 tsp mustard seeds ( rai / sarson), 1/2 tsp cumin seeds (jeera), 6 curry leaves (kadi patta), 2 tsp finely chopped garlic (lehsun), 1/4 tsp turmeric powder (haldi), 1 tsp chilli powder, 1/2 tsp garam masalasalt to taste and 2 tbsp finely chopped coriander (dhania).

How to choose pumpkin, bhopla

  1. This is what kaddu looks like. Red pumpkin or Lal bhopla is poor man's source of carotene in India. Other sources (like apples, carrots) normally happen to be rather expensive when not in the peak of season. Red pumpkin, however, is 'in season' throughout the year unlike in the Western countries, where it is typically an autumn appearance.
  2. Choose pumpkin that is firm, heavy for its size and have dull, not glossy, rinds.
  3. The rind should be hard as soft rinds may indicate that the squash is watery and lacking in flavor.
  4. Avoid those with any signs of decay, which manifest as areas that are water-soaked areas or moldy.
  5. Wash the pumpkin with water and pat dry using a kitchen towel.

How to make pumpkin, bhopla cubes

  1. Wash the rind of red pumpkin with water and dry it using a kitchen towel. Use a sharp knife to carefully slice off the top and the bottom.
  2. Stand the red pumpkin on end, and carefully slice down through the centre. Remove the seeds with the tip of a knife, if you want.
  3. Slice red pumpkin into not very thick nor very thin wedges.
  4. Remove the rind by inserting a knife between the rind and the flesh to cut it away.
  5. Remove all the remaining seeds.
  6. Cut the wedges into long uniform thick strips.
  7. Line up the strips with your non-working hand and cut them into square pieces of desired size (approximately ½ inch to 1 inch in diameter).
