Tabbouleh is a lebanese salad that goes very well with the falafel burger. The middle-eastern influence governing both recipes ensures that the platter is picture-perfect. Parsley and mint are the key herbs featuring in this appealing salad, while broken wheat is another signature ingredient. Just take care not to overcook the broken wheat or else the dish might end up soggy.
Method- Boil 2½ cups of water in a broad pan, add the broken wheat and cook on a medium flame for 10 minutes or till the broken wheat is cooked and all the water has been evaporated.
- Transfer the broken wheat into a strainer and pour some cold water over it to cool it. Drain well.
- Combine the broken wheat and all the vegetables in a deep bowl, toss well and refrigerate for atleast an hour. .
- Just before serving, add the sesame seeds,, lemon juice, olive oil and salt and toss well.
- Serve chilled.
