Baked Sweet Shakar Para: A Healthier Festive Treat
The Sweet Shakarpara recipe is a classic Indian sweet snack, also known as Meetha Shankarpali or Shakkar Pare. What makes this dish a great hit with everybody is its crispy texture and pleasant sweetness. Traditionally, shakarparais made with refined flour and deep-fried in ghee. However, this recipe offers a much healthier, baked version, strategically using whole wheat flour (gehun ka atta) to introduce more fiber while retaining the delicious, addictive crunch.
Preparing the Sweet Liquid Base
The foundation of the dough is a warm, sweet mixture that helps dissolve the sugar and ensure even distribution throughout the flour. In a deep non-stick pan, combine milk (221 tbsp), sugar (2 tbsp), and ghee (1 tbsp). Cook this mixture on a medium flame for 2 minutes, or just until the sugar dissolves, stirring occasionally. It's important to use the sugar minimally just to lend a pleasant sweetness. Once done, set the mixture aside to cool completely.
Kneading the Firm Dough
While the sweet liquid cools, prepare the dry ingredients. Sieve the whole wheat flour (43 cup) and a pinch of salttogether in a deep bowl. Sieving ensures the flour is light and lump-free. Once the liquid mixture is cool, gradually add the milk-sugar mixture, a little at a time, into the flour and knead into a firm dough. The dough must be firm—not soft—to achieve the desired crispy texture after baking.
Rolling and Shaping the Diamond Pieces
Once the dough is ready, divide the dough into 2 equal portions. Take one portion and roll it out into a relatively large circle of about 200 mm. (8") diameter. To prevent the shakarpara from puffing up and to ensure it bakes evenly and becomes crisp, prick it evenly using a fork across the entire surface. Finally, use a knife to cut it into 25 mm. (1") diamond shaped pieces. Repeat the rolling and shaping process with the remaining portion.
The Baking Process
To prepare for baking, grease a baking tray and carefully place the diamond shaped pieces on the tray at regular intervals. Ensure they are not touching each other to allow for proper air circulation. Bake in a pre-heated oven at 180∘C (360∘F) for 8 to 10 minutes. The baking time is relatively short, so keep a close watch until they turn a light golden brown color and feel crisp.
Serving and Storage
Once the Baked Sweet Shakar Para are done, remove them from the oven and allow them to cool completely on the tray. Cooling is essential, as the shakarpara will firm up and become perfectly crispy as they cool. Take the healthier route and try this delicious treat during the festive season. When cooled, they can be served immediately or easily store[d] in an air-tight container for later use.

Ingredients

Method
for Sweet Shakarpara
- Combine the milk, sugar and ghee in a deep non-stick pan, mix well and cook on a medium flame for 2 minutes or till the sugar dissolves, while stirring occasionally. Keep aside to cool.
- Sieve the whole wheat flour and salt together in a deep bowl with the help of a sieve.
- Add the milk-sugar mixture, a little at a time and knead into a firm dough.
- Divide the dough into 2 equal portions.
- Roll out a portion of the dough into 200 mm. (8”) diameter circle.
- Prick it evenly using a fork, cut it into 25 mm. (1") diamond shaped pieces.
- Repeat steps 5 and 6 with one more portion.
- Place them on a greased baking tray at regular intervals.
- Bake in a pre-heated oven at 180°c (360°f) for 8 to 10 minutes.
- Cool completely and store in an air-tight container. Use as required.

To prepare the liquid mixture for Sweet Shakarpara, Baked Sweet Shakar Para, in a deep non-stick pan pour the 2 1/2 tbsp milk.

Add the 2 tbsp. sugar.

Add the 1 tbsp ghee. If the quantity of ghee is less in the dough then the shakarparas will turn hard instead of getting flaky and crispy. You can also use soft butter or oil as substitute but, ghee imparts a beautiful flavour.

Mix well and cook on a medium flame for 2 minutes or till the sugar dissolves, while stirring occasionally. Keep aside to cool.

For the dough of Sweet Shakarpara, Baked Sweet Shakar Para, place a strainer over a deep bowl.

Add the 3/4 cup whole wheat flour (gehun ka atta).

Sift together with the help of a strainer. This breaks down the lumps from flour, remove impurities and adds in volume to the flour by aeration.

Add a pinch of salt. They enhance the sweetness in the dough giving shakarpara a balanced flavour.

Gradually, add the milk-sugar mixture and combine all the ingredients. Ensure it is cooled completely before adding or else your hands will burn.

Knead into a firm dough. If the dough is soft then the shakarparas will get soft and not crunchy. If the dough is too soft, add more atta and if the dough is too stiff, add a tbsp or two of water and knead for a couple of minutes before you start rolling.

To make the Sweet Shakarpara, Baked Sweet Shakar Para, divide the dough into 2 equal portions.

Roll out a portion of the dough into 200 mm. (8”) diameter circle.

Cut it into 25 mm. (1") diamond shaped pieces and separate out the shakarparas. Repeat steps 5 and 6 with one more portion.

Grease a baking tray with ghee. You can even use 1tsp oil greasing.
