As the name says aloo stuffed onion pakoda is a combination of potatoes and onions in one mouthfeel. Moreover you will experience onions through and through in these pakoras as here the onion shelves are stuffed with a mixture of mashed potatoes and finely chopped onions along with a mix of Indian spices for that added touch of aroma and flavours.
The batter of these Indian stuffed onion pakora is just flawless with the perfect proportion of besan and rice flour to lend the needed crispiness. Though baking soda is optional, we strongly recommend adding it as it makes the pakoras a tad fluffy and all the more delectable to bite into.

For stuffed onion pakoda- To make stuffed onion pakoda, peel and cut the onions into halves and separate each layer of onion halve. Keep aside.
- Divide the potato stuffing into 16 equal portions.
- Stuff a portion in one onion halve, cover it with another onion halve and press slightly to seal the stuffing.
- Heat the oil in a deep non-stcik pan, dip the potato stuffed onions into the besan batter one by one and deep fry in hot oil on a slow flame till they turn golden brown and crisp.

To be mixed into a potato stuffing: 4 small onions, 1½ cups boiled and mashed potatoes, ¼ cup finely chopped onions, 2 tbsp finely chopped coriander, 2 tsp ginger-garlic (adrak-lehsun) paste, ½ tsp green chilli paste, ¼ tsp chilli powder, ¼ tsp chaat masala, ½ tsp turmeric powder and salt to taste. For besan batter: 1 cups besan (bengal gram flour), 2 tbsp rice flour (chawal ka atta), 1 tsp chilli powder, ½ tsp turmeric powder (haldi), ¼ tsp asafoetida (hing), 1 tbsp finely chopped coriander (dhania), ¼ tsp baking soda, optional, salt to taste and 2 tbsp hot oil. Take 4 small onions. We recommend you use small sized onions, so there is no wastage.

Cut the bottom and top edge of each onion.

Peel the skin off and discard it.

Cut each onion into two halves.

Separate each layer of the onion halve. We need 32 onion shells in all to make 16 pakodas. Keep aside.
