Method

  1. Sieve the flour.
  2. Beat the eggs and sugar thoroughly until very thick.
  3. Fold in the flour.
  4. Grease and dust sponge finger tins and spread a little mixture in each tin.
  5. Sprinkle a little castor sugar on top.
  6. Bake in a hot oven at 400°F for 7 to 10 minutes.
  7. Cool and store.
