This is a non-fried preparation is busting with flavours. As the name suggests, Indian papad churi is a preparation of crushed papads which are tossed in spices and ghee. There are many different versions of this recipe. We have added some Bikaneri bhujia to this to provide extra crunch.

1 1/4 cups roasted and crushed bikaneri papad, 1/4 cup bikaneri bhujia, 1/2 cup finely chopped onions, 2 tbsp finely chopped coriander (dhania), 2 tsp chilli powder, 1 tbsp melted ghee and salt to taste. See below image of list of ingredients for Rajasthani papad ki churi.

This is Bikaneri papad. It is usually made from urad dal flour, moong dal flour, salt, black pepper, papad khar, asafoetida and edible Oil.

Place a Bikaneri papad on an open flame.

Roast it till it turns crisp from both the sides. Always remember to keep turning it frequently to prevent it from burning on one side. Also keep rotating the papad so that it gets uniformly crisp from all sides.

Add 1/4 cup bikaneri bhujia. You get this readymade in the market.

Add 1/2 cup finely chopped onions. This is a must to give contrast in texture and flavour. But if you are a Jain, you can avoid adding onions.

Add 2 tbsp finely chopped coriander (dhania).

Add 2 tsp chilli powder. You can adjust the spice level as per your preference. pls chk chilli powder seems to be too much

Add 1 tbsp melted ghee. This helps to coat the chilli powder well.

Add salt to taste. Note that you will require very little salt as the papad has a high salt content. Measure salt in this recipe
