Method

For the sugar syrup
 

  1. Combine the sugar along with 1 cup of water, cardamom powder and a few saffron strands in a broad non-stick pan.
  2. Mix well and cook on a medium flame for 5 minutes, while stirring continuously.
  3. Remove from the flame and keep aside.


For the chenna
 

  1. Heat the milk in a deep non-stick pan, add the lemon juice gradually and stir it gently.
  2. The milk will curdle and the whey will separate.
  3. Strain it well using a muslin cloth and wash the chenna thoroughly.
  4. Squeeze out the excess water from the chenna. You will get 1/2 cup chenna.


For the malpuas
 

  1. To make chenna malpua, in a mixer jar add chenna, plain flour, semolina, fennel powder, nutmeg powder and 11/2 cups milk.
  2. Blend it well to get a smooth lump free mixture. Transfer the mixture into a deep bowl.
  3. Heat oil in a pan and pour a ladle full of batter in hot oil to make the malpuas.
  4. Shallow fry the malpuas on medium flame until it turns golden brown in colour from both the sides.
  5. Remove the malpua and immediately immerse it in the sugar syrup.
  6. Allow them to soak for approx. 5 minutes.
  7. Repeat the steps 4 to 6 to make 17 more malpuas.
  8. Drain the malpua from the sugar syrup and place it on a serving plate.
  9. Serve the chenna malpuas hot garnished with almonds and pistachios.

    10. Shallow fry the malpuas on medium flame until it turns golden brown in colour from both the sides.
    11. Remove the malpua and immediately immerse it in the sugar syrup.

This Malpua recipe is quite different, They melt in the mouth and the nuts used in the garnish look appealing.I eat these immediately once they are made. One needs practice to make them perfectly.

I never thought making Malpua would be so easy.. The paneer malpua dipped in sugar syrup tastes fantastic.. If you love sweet dishes and looking for something different apart from the regular ones.. you must try this!!

Dukhaan me lunch ke liyee kafi late hota hai. aaj kal wife yeh Chenna Malpua naste me banati hai. Peet ekdam full ho jata hai aur jaldi bhukh bhi lagti nahi. Yeh Chenna Malpua bade swadisht bhi lagte hai.
