This traditional quick Maharashtrian chilla recipe is an healthy mixed flour dhirde. Made with three types of flours, besan, jowar and whole wheat flour, chilla is easy to prepare.

To make Maharashtrian thalipeeth combine all the ingredients in a deep bowl, mix well and make a thick batter using enough water. Heat a non-stick tava (griddle) and grease it lightly with oil. Pour a ladleful of the batter on the tava. Cook the thalipeeth on a medium flame, using a little oil, till it turns golden brown in colour from both the sides. Serve healthy thalipeeth hot with curds or green chutney.

Ingredients
For Chilla
3 tbsp besan (Bengal gram flour)
3 tbsp jowar (white millet) flour
3 tbsp whole wheat flour (gehun ka atta)
1/2 cup chopped onion
1/4 cup chopped tomato
2 tsp finely chopped green chillies
2 tbsp chopped coriander (dhania)
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/2 tsp cumin seeds (jeera) powder
1/2 tsp coriander (dhania) powder
salt to taste
oil for greasing and cooking

Method
For chilla
- To make quick maharashtrian chilla recipe, combine all the ingredients in a deep bowl, mix well and make a thick batter using enough water.
- Heat a non-stick tava (griddle) and grease it lightly with oil.
- Pour a ladleful of the batter on the tava (griddle) and pat it evenly with your fingers to form a 100 mm. (4”) diameter circle.
- Cook the chilla on a medium flame, using a little oil, till it turns golden brown in colour from both the sides.
- Repeat steps 3 and 4 to make 6 more chillas.
- Serve the quick maharashtrian chilla recipe hot with curd and pickle.

Can we replace jowar with something else. Not sure, if jowar can be eaten in summers especially in north India.
