For the rice
1 cup uncooked long grain rice (basmati chawal)
1 1/4 cups milk
1 1/2 cups water
2 1/2 tsp salt
For the gravy
3/4 cup kabuli chana (white chick peas)
1 pinch baking soda
1 tsp ginger (adrak) paste
1 tsp garlic (lehsun) paste
1 tsp chilli powder
1/2 tsp turmeric powder (haldi)
3/4 cup fresh curd (dahi)
3/4 cup chopped tomato
3 tbsp ghee
salt to taste
For the baking
2 tbsp chopped coriander (dhania)
1 tbsp chopped mint leaves (phudina)

Many times when i travel by train or bus, my mother pack a bunch of Theplas along chunda or dry peanut chutney in my office bag. She is very much strict on NOT TO HAVE food from train or bus stands. She makes various type of theplas like Doodhi Theplas, Mooli Theplas, Methi Theplas which i enjoyed with masala chai she packed for me in Thermas.

i have tweaked this recipe to make it in a pressure cooker. Its a one pot version and I have excluded any spices that i did not have in stock, yet it was very good!
