The egg plants tastes great when baked and then the pasta layer goes well with it. Very innovative baked dish. You could change the filling with anything you wish but use the eggplant as a base and top with bread crumbs.

Loved the combination of creamy roasted vegetables and pizza sauce. Served the Lasagne with Rice and Cheese Balls and Roasted Capsicum Soup. My family loved this hearty meal combo.
