Ingredients

Doodhi na Rasawala Muthia
1 cup grated bottle gourd (doodhi / lauki) , squeezed
1/2 cup besan (bengal gram flour)
1/2 cup whole wheat flour (gehun ka atta)
1 tsp finely chopped ginger (adrak)
1/2 tsp finely chopped green chillies
1/8 tsp salt

For The Rassa
1 tsp oil
1/4 tsp mustard seeds ( rai / sarson)
1/2 tsp cumin seeds (jeera)
a pinch of asafoetida (hing)
a pinch of turmeric powder (haldi)
1/4 tsp chilli powder
1/4 cup sour curd (dahi)
1/8 tsp salt
1 tbsp finely chopped coriander (dhania)
Method

For doodhi na rasawala muthia

    For doodhi na rasawala muthia
  1. To make doodhi na rasawala muthia recipe, in a small bowl, combine dahi and ½ cup water. Whisk well and keep aside.
  2. Combine grated doodhi, besan, wheat flour, ginger, green chillies and little salt in a deep bowl.
  3. Knead into a soft dough without using water. Divide it into 16 equal portions and roll oval shape muthias. Keep aside.
  4. Heat oil in a deep pan, add mustard seeds, cumin seeds, asafoetida, turmeric powder and chilli powder. Sauté for a few seconds.
  5. Add 2 cups of water and bring it to a boil. Drop the muthias one by one in the boiling water.
  6. Boil them on a medium flame for 12 to 15 minutes until they float on top. Add the curd mixture and little salt.
  7. Mix well and cook on a medium flame for 15 minutes till the rassa thickens, while stirring occasionally.
  8. Serve doodhi na rasawala muthia hot garnished with coriander.
