To make bajra dhebra, combine the jaggery and curd in a small bowl and mix well. Combine all the ingredients along with jaggery-curd mixture in a deep bowl and knead into a semi- soft dough using enough water. Divide the dough into 40 equal portions. Pat a portion of the dough into a 25 mm. (1”) diameter and 1 cm thick circle in between your palms. Heat the oil in a deep non-stick pan and deep-fry a few dhebras at a time on a medium low flame till they turn golden brown in colour from both the sides. Drain on an absorbent paper. You can deep-fry 6 to 7 dhebras at a time. Serve immediately or store in an air-tight container and consume within 2 days.

If the dough is too soft or hard, shaping the dhebra is difficult. 3. While shaping the dhebra, smoothen each portion well between your palms before shaping. After shaping the edges at the circumference should be smooth too and not cracked. If the edges are cracked, there are chances that the dhebra might open up while frying.

Ingredients
For Bajra Dhebra
1 1/2 cups bajra (black millet) flour
1/4 cup whole wheat flour (gehun ka atta)
3/4 cup finely chopped fenugreek leaves (methi)
2 tbsp grated jaggery (gur)
1/4 cup curd (dahi)
1/2 tsp ginger (adrak) paste
1 tsp green chilli paste
1 tsp garlic (lehsun) paste

1/2 tsp red chilli powder
1/2 tsp coriander (dhania) powder
1 1/2 tbsp sesame seeds (til)
1 tbsp oil
salt to taste

Method
For bajra dhebra
- To make bajra dhebra, combine the jaggery and curd in a small bowl and mix well.
- Combine all the ingredients along with jaggery-curd mixture in a deep bowl and knead into a semi- soft dough using enough water.
- Divide the dough into 40 equal portions.
- Pat a portion of the dough into a 25 mm. (1”) diameter and 1 cm thick circle in between your palms.
- Heat the oil in a deep non-stick pan and deep-fry a few dhebras at a time on a medium low flame till they turn golden brown in colour from both the sides. Drain on an absorbent paper. You can deep-fry 6 to 7 dhebras at a time.
- Serve the bajra dhebra immediately or store in an air-tight container and consume within 2 days.

To make bajra dhebra recipe | bajra methi dhebra | methi na dhebra | Gujarati snack recipe, we need fresh methi leaves. Always select bunches that are fresh and green in colour. Avoid if they are yellow or very dry textured.

Separate the methi leaves from the stems and discard the thick stems.

Wash the methi leaves and finely chop them. We need 3/4 cup finely chopped fenugreek (methi). Keep aside.

Add salt to taste.

Finally add the prepared curd-jaggery mixture.

Mix all the ingredients well using your finger tips.

Knead into a semi- soft dough using enough water. If the dough is too soft or hard, shaping the dhebra is difficult.

Hi Divya, We have not tried baking it but alternatively, you can place it on a hot tava (griddle). Cook them on a medium flame using ? tsp of oil, till they turn golden brown in colour from both the sides.

These dhebras will last for a day. You can add onions, but then you need to serve immediately.
