For soya ki sabzi
 

  1. To make soya chunks masala, combine the soya chunks, salt and add enough warm water together in a bowl.
  2. Keep aside to soak them for 10 to 12 minutes.
  3. Squeeze the soya chunks thoroughly and transfer into another bowl.
  4. Add curd, turmeric powder, chili powder, cumin coriander powder, garam masala and mix well. Keep aside.
  5. In a mixer add onions, tomatoes, soaked dry chilies, garlic, ginger, ¼ cup water and blend into a smooth paste.
  6. Heat oil in a deep pan, add cumin seeds, prepared masala paste and cook on medium flame for 2 to 3 minutes, while stirring occasionally.
  7. Add the marinated soya chunks, salt and ¾ cup of hot water. Mix well and cover and cook on medium flame for 8 to 10 minutes.
  8. Add kasuri methi and coriander and mix well.
  9. Serve soya chunks masala hot with roti or rice.

    1. To make soya chunks masala, take 1½ cup soy chunks (nuggets) in a deep bowl.
    2. Add salt to taste.
    3. Add enough warm water.
    4. Keep aside to soak them for 10 to 12 minutes.

    2. Add ½ cup whisked curds (dahi).
    3. Add ½ tsp turmeric powder (haldi).
    4. Add ½ tbsp chilli powder.
    5. Add 2 tsp coriander-cumin seeds (dhania-jeera) powder
    6. Add ½ tsp garam masala.
    7. Mix well. Keep aside.

    1. In a mixer add ¾ cup roughly chopped onions.
    2. Add ¾ cup roughly chopped tomatoes.
    3. Add 2 soaked dry kashmiri red chillies.
    4. Add 5 garlic cloves.
    5. Add 1 small piece of ginger.
    6. Add ¼ cup water.
    7. Blend into a smooth paste.
    8. Heat 3 tbsp oil in a deep pan.
    9. Add 1 tsp cumin seeds (jeera).
    10. Add the prepared masala paste.
    11. Cook on medium flame for 2 to 3 minutes, while stirring occasionally. 
    12. Add the marinated soya chunks.
    13. Add salt to taste.
    14. Add ½ cup of hot water.
    15. Mix well and cover and cook on medium flame for 8 minutes.
    16. Add 1 tbsp dried fenugreek leaves (kasuri methi).
    17. Add 2 tbsp finely chopped coriander and mix well.
    18. Serve soya chunks masala hot with roti or rice.

      5. Protein : Protein is required for the managing the wear and tear of all cells of the body. Have protein rich Indian foods like paneer, curd, Greek yoghurt, tofu, almonds, sprouts, chana, rajma, chick peas, quinoa, buckwheat ). 17% of RDA.
