We have a large collection of different kinds of idlis but this is the first time we have made a sweet idli called shepu sweet idli.

Pro tips for shepu sweet idli. 1. Grease the idli moulds with oil so that the idlis do not stick to the bottom. 2. Just before steaming, add 1 tsp fruit salt to the batter. Fruit salt provides a spongy, fluffy texture to the idli. Use neutral flavored fruit salt. 3. Mix gently after adding the fruit salt. If you mix vigorously then your idlis will turn flat. 4. Use neutral (regular flavour) fruit salt.

For shepu sweet idlis- To make shepu sweet idli, grind the soaked rice with the grated coconut to a thick smooth paste, adding a little water.
- Wash the rice flakes, drain. Mix curd and 1/4 cup water together to form buttermilk. Add to the rice flakes. Set aside for 10 minutes.
- Grind the rice flakes in buttermilk and jaggery to a smooth paste. Add this to the rice coconut batter.
- Add the chopped dill leaves and salt and mix well.
- Check the consistency and now add a little water only if required so as to get a thick batter.
- Add the fruit salt to the batter and sprinkle a little water over it.
- When the fruit salt starts bubbling, mix gently.
- Spoon out the batter into greased idli moulds and steam for 10 to 12 minutes.
- Serve the shepu sweet idli hot with ghee.

In a bowl put 2 cups raw rice (chawal).

Cover with enough water.

Clean the rice. See the dirt. You will have to change the water 3 times or until clear.

Clean rice.

Cover and soak for 4 hours or overnight.

Rice after soaking.

Drain.

Soaked and drained rice.

In a mixer put 2 cups raw rice (chawal) , soaked for 4 hours , drained.

Add 1/4 cup freshly grated coconut.

Add 1/2 cup water.

Grind to a thick paste.

In a bowl put 1/2 cup beaten rice flakes (poha).

Add enough water to cover it.

Clean. See the dirt. Change water 2 to 3 times till clear.

Poha is clean.

Drain.

Put washed poha in a bowl.

In a small bowl add 1/4 cup curd.

Add 1/4 cup water.

Mix well. This is your buttermilk also called chaas in Hindi.

Add the curd water mixture to the poha.

Set aside poha ( rice flakes) curd mixture for 10 minutes.

In a mixer put the rice flakes curd mixture.

Add 1/2 cup crushed jaggery (gur).

Grind to a smooth paste.

Add this to the rice coconut batter.

Add 1/2 cup finely chopped dill (shepu / suva bhaji).

Add salt to taste. We added 1/2 tsp salt.

Mix well.

Check the consistency and now add a little water only if required so as to get a thick batter. We added 1 tablespoon water.

Mix well. This is the final consistency of the batter.

To make sheepu sweet idli recipe | heat enough water in a idli steamer.

Meanwhile, grease the idli moulds with oil so that the idlis do not stick to the bottom.

Pour 1 tbsp of water over the fruit salt.

Let the bubbles form with a white froth.

Mix gently after adding the fruit salt. If you mix vigorously then your idlis will turn flat. Also ensure that all the white froth is mixed in otherwise your idli will get some dark spots on it.

Pour a ladleful of batter into each greased idli mould.

Steam in a steamer for 10 to 12 minutes or till the idlis are cooked.

To check whether they have cooked properly or not, insert a toothpick, knife or fork in the centre of the idli, if it comes out clean, your vegetable idlis are cooked.
